Baked Caramel Corn 1 c. butter
2 c. brown sugar
1/2 c. corn syrup
1 tsp. salt
1/2 tsp. baking soda
1 tsp. vanilla
6 c. popped corn
Melt butter, stir in brown sugar, corn syrup, and salt. Bring to a boil, stirring constantly. Boil without stirring for 5 minutes. Remove from heat; stir in soda and vanilla; gradually pour over popped corn, mixing well. Turn into 2 large shallow pans or 1 large roaster. Bake at 250 degrees for 1 hour. Stir every 15 minutes.
