Baked Caramel Corn

1 c. margarine
1/2 c. light corn syrup
2 c. firmly packed brown sugar
1 tsp. salt
1 tsp. vanilla
1/2 tsp. soda
6 qt. popped corn (pick out unpopped kernels)
Mixed nuts (optional)

Melt margarine; stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Cook without stirring for 5 minutes. Remove from heat and stir in soda and vanilla. Liquid will double in size. Put popcorn in large greased pans and pour sauce over popcorn, mixing well. Bake at 250 degrees for 1 hour, stirring every 15 minutes. Remove from oven and cool completely. Break apart and store in air tight containers.
